Preheat the oven to 200 degrees C
Take 4 skinless chicken breasts and marinade (while the oven is heating up) for 10 – 20 minutes in the following:
- Juice of half a lemon
- 100ml of thai sweet chilli sauce
- 2 cloves of garlic crushed
- 3cm of ginger finely grated
Place chicken breasts on a baking tray or oven proof dish and cover with the marinade. Cook for about 10 minutes until done.
Squeeze the juice of the other half of the lemon over the cooked chicken breasts. This just intensifies the citrus flavour and freshens if all up.
I ate this with my zesty cous cous salad with spring onions, sprouts, coriander and toasted almonds.
