The last 6 weeks I have been very busy starting a new cold smoked food business, so this recipe was developed for our website at The Smoking Shed.
To make the gaucamole lightly mash a couple of avocado’s with finely sliced spring onions, a few chopped pickled jalapeno chillies (depending on how hot you like it), the juice of a fresh lime, salt and a few chilli flakes if you want some extra punch. If you wanted to bring some smokey notes to the guacamole, you could use smoked salt and smoked chilli flakes.

Add some chopped coriander to the mix and then place a dollop of the chunky guacamole on a bed of rocket and top with smoked tuna cubes.
Drizzle over some olive oil and another another spritz of lemon or lime.
The zesty and spicy guacamole really compliments the mellow smokey flavour of the tuna.
This is also nice to pile the whole lot onto crunchy bread or bruschetta.
