savoury biscuits with smoked cheddar

smoked cheddar biscuits with smoked butter too

Recently my life has been filled with smoked foods due to the starting of a smoked foods business, so some of the recipes have been quite ‘smoked centric’.  Apologies, but this recipe is no exception.

Here I updated a previous savoury biscuit recipe where I had used smoked chilli flakes, to include smoked butter and smoked cheddar.

The first recipe was my post for smoked chilli cheese biscuits

What you will need:

  • 2 eggs
  • 2 Tbsp water
  • 120g (1 cup) cake flour
  • 70g self raising flour
  • 2ml salt (1/2 tsp)
  • 1 tsp smoked salt (and a bit extra for a light sprinkle)
  • 125g smoked butter cut into cubes
  • 80g grated smoked cheddar cheese
  • 1 tsp smoked chilli flakes (optional)

How to make:

  • beat the eggs lightly with the water and set aside
  • put all the dry ingredients in the food processor and mix briefly to combine
  • add the butter and cheese and process until a fine crumb
  • add a little of the egg mixture and mix until a firm dough forms (around half of it)
  • cover and place the dough ball in the fridge either overnight or for an hour (I did an hour)
  • When you are ready to bake, pre heat the oven to 180 C
  • roll the dough out on a lightly floured surface until around 6mm thick
  • cut into squares or using a cookie cutter, into rounds, or into strips and make into straws
  • brush some of the remaining egg mixture over the biscuits and if you like them to be a bit salty as I do, sprinkle over a very light dusting of salt / smoked sea salt
  • place on a greased or lined baking sheet and bake in the oven for 18 -20 minutes until golden brown

The keep for a few days in an airtight container.

Yum, gotta try these soon! Would be great for picnics at Kirstenbosch – come on summer!
