This was a simply delicious dressing that Laurence knocked up in the pestle and mortar the other day for our salad lunch.
We are so very proud of our newly developed smoked dried red bell pepper sprinkle at The Smoking Shed. It’s so versatile and adds a stunning, intense flavour dimension to so many recipes.
It works wonderfully in this salad dressing.
What you need to make:
- 1Tbs smoked red pepper sprinkle (or use a 1/2 tsp smoked paprika)
- 1 garlic clove
- a grind or two of smoked chilli flakes
- a good pinch of smoked salt
- 2 Tbs red wine vinegar
- 3 Tbs olive oil
Grind the red pepper sprinkle with the garlic and salt in the pestle and mortar until a paste is formed. Add the vinegar, chilli and olive oil and mix.
This could also work as a basting for fish or chicken. Just reduce the amount of olive oil to intensify the flavour.
