summer fruit salad with a ginger, mint and lime dressing

Summer is a time for juicy, luscious and plump fruit in abundance.  I tend to gorge myself over these months, savouring each succulent variety.

A fruit salad is an opportunity to combine these tastes, textures and colours, that create an exquisite explosion of flavour in one mouthful.

This fragrant and sweet dressing adds a little zing to what is already naturally perfect.

What you need to make the dressing: (make this in advance)

  • 80ml water
  • 45gm sugar
  • a small bunch of fresh mint
  • 3cm of fresh ginger grated
  • juice of half a lime or lemon

Put the water and sugar in a small pot and bring it to a boil and then allow to simmer for about 5 minutes to thicken.  In a bowl add the mint (I chopped slightly), ginger and lime juice. Pour the hot sugar syrup over this and allow to cool.  Once cool, strain out the mint leaves and ginger, giving it a squeeze and the place in the fridge to cool.

Choose any fruit that is seasonal and that you desire.  I loved the combination I chose, with the tropical mango, pineapple and lychee are complimenting the nectarines, peach and melon. The Mineola brought in the citrus and the pomegranate seeds just dazzle adding little bursts of crunch and flavour.
