I’m a die-hard romantic but find V day so artificial and contrived. The over-commercialisation of it is a bit much, so this year I have arranged an anti-Valentines day picnic on the beach for friends and their friends. We will sip bubbles, nibble on snacks and watch the sunset on a perfect Cape Town day. I couldn’t think of anything better to do.

I made these 10-minute pizzas with tortillas. I always have them on hand in my cupboard, or after the pack is opened, I seal and keep them in the freezer. They are perfect to whip up a very thin base pizza when the craving rears its head.

In the past, I have made them bianco (white) and with pears and blue cheese . You can really just put whatever you like on.

As for Hawaiian pizzas, the well loved-kids favourite, I would have to admit that I do love this flavour combination. I don’t order it in a restaurant, but when my nephews come over for pizza night, I make it for them. I eat it with them, and I love it with them.

With this version I’ve made it a teeny bit more sophisticated and grilled the pineapple slices first, giving them a nice mellow caramel flavour. I added chilli which just lifts it up a notch, and I used a combination of mozzarella and mature cheddar. I bought an imported dry-cured, smoked ham from the Trentino Alto Adige region of Italy. Marketed as ‘Speck’ in Woolies, but it’s a Parma-style ham. Melt in the mouth delicious. I used 2 slices cut into 4 per pizza.

I use ready-made tomato sauce, tomato passata or tinned tomatoes which I crush to a smooth paste, draining any excess liquid.

Preheat the oven to 200 C and spread a thin layer of sauce over the tortilla base. Crush a pinch of dried oregano and dried chilli flakes (optional) onto the sauce, and scatter grated mozzarella and cheddar lightly and evenly. Place pieces of grilled pineapple and ham, and bake for 8 – 10 minutes until bubbling and just starting to brown on the edges.

A sprinkle of salt and black pepper finished off this quick and easy snack.

    Couldn’t stand it a moment longer and went out and bought 3 pineapples yesterday! Now this is a must and Friday night is always pizza night in our house so will have to try with the grilled, chilli pineapple.

  4. This sounds great! Hawaiian is a favorite of mine in restaurants, it looks fantastic on a tortilla. Also, your pear tortilla pizza was perfectly-timed inspiration — I was given some beautiful blue cheese and made puff pastry triangles with pear, blue cheese, prosciutto and arugula for a baby shower I threw over the weekend.
