The world seems to be obsessed with vegan and gluten free recipes right now so I’m diving in. I’m not doing it because I’m either vegan or gluten intolerant, but because I love playing around with new ingredient combinations and cooking techniques. I have never tried my hand at vegan cheese substitutes made with nuts, but have tasted a few that were quite tasty. I spotted this Bill Granger recipe for sticky mango pudding with coconut custard in a Goodhousekeeping mag at my parent’s house over Christmas and knew I wanted to make it. I always think of Bill as somewhat of a hot pudding maestro since I made his coconut and lime delicious pudding a few years ago and landed up winning the competition that took me to London. That pudding is really fantastic if you are looking for a fruit flavoured hot pudding by the way. I just loved the sound on this twist on a classic . I’ve wanted to make chicken enchiladas since I started this blog, and I’m shocked that I haven’t done them yet. I’m obsessed with Mexican cuisine and have been since I was 22 and fell in love with it on my first trip to the USA. My sister and I bought a car and drove across North America via the Southern route. We encountered much amazing Mexican food along the way but sadly as South African passport holders we were not able to go to Mexico at that time. It’s very high on my food bucket list to go, so watch this space. I had also wanted to keep the recipe quite authentic, but after much research it’s fairly complicated to make an authentic enchilada sauce, as you need specific dried chilies. In South Africa, this is near impossible to come by. The last time I made a proper Mexican sauce – Chipotles in adobo, I used chipotles, which I bought in New York. My soul does a little happy dance as the last official day of summer arrives and we move into March and early autumn. Its my favourite time of year hands down. I prefer April as it gets even cooler and the light softens as the days get shorter. I start dreaming about more robust dishes but still like to take full advantage of the last bit of decent fruit in season, like plums, mangos, passion fruit and pomegranates. I’ve been blogging for so many years now and thought it a good idea to bring some of my favourite recipes back into the limelight each month. I tasted them so I know they are the best of the bunch. I’m constantly reminded how our lives work in cycles and for me eating with the seasons is the strongest affiliation I have to this.

green juice with cucumber, celery, mint & ginger

I love the refreshing taste of cucumber and in this juice with celery apple, mint and ginger, the combination is delicious and incredibly thirst quenching.

First up I must say that I think juicing on a regular basis is a bad idea. All the important fiber gets wasted and you need a lot of fruit and vegetables to make a decent amount of juice. The calorie load of a juice is far higher than that of the fruit or vegetable in its natural state and at the end of the day you are extracting a high percentage of water. I know this because after making this green juice I allowed it to settle in the bottle and really about 85 percent is pure water and the rest the green chlorophyll rich parts. If you were under any illusion that drinking green juices in some way ‘detoxes’ your body, please check out this brilliant article which totally debunks the myth. BUT, juice can taste delicious and for a special treat it makes a nice addition to the breakfast or lunch table.
