This recipe excited me because I’ve wanted to make it for a while. It also involves pasta, so nothing is better than that. Initially I conceptualized it being with tortellini, but good fresh filled tortellini is difficult to come by in South Africa, so ravioli – a much more common variant it is. I’ve combined fabulous things to make this dish. Spinach and ricotta ravioli, a homemade Italian tomato sauce, meatballs and buffalo mozzarella. roasted pumpkin and ricotta gratin

My adoration with ricotta deepens every day and I love using it in both sweet and savoury recipes. The fresh neutral taste lends itself to so many different flavour applications and its a joy to play with. I love to eat at breakfast with honey drizzled over and sliced fresh fruit. Top a cake like bread with all of this and you are in heaven. Its wonderful to bake into things too, like this roasted pumpkin gratin. It puffs up into an almost soufflé like texture and is quite scrumptious.

I roast the pumpkin before to ensure its cooked through and the process adds wonderful flavour. The resultant texture in the gratin is quite soft, but it’s that sort of comfort I’m looking for. I added a breadcrumb and Parmesan topping to create some texture. A scattering of toasted pine nuts would be wonderful too. Continue Reading →

I love the Mediterranean new potatoes from Woolies, they have so much more flavour than regular potatoes and are lower in GI.  I have also started to really enjoy fennel.  It has such a distinct taste which adds another dimension to a dish.

This is so simple to make, and is a perfect side dish to a roast, or a grilled piece of meat or fish. I love the texture combinations of the softer potatoes with crispy edges and the slightly crunchy fennel.
