how to make a pomegranate mojito {video}

pomegranate mojito

If you like a mojito you are so going to love this pomegranate version which adds a stunning flavour dimension to the lime and mint.

pomegranate mojito

I love this cocktail because it’s not that sweet and is so easy to make. It’s literally a case of banging all the ingredients into a glass and giving them a good muddle and stir. Continue Reading →

a ginger brandy and rooibos cocktail

a ginger brandy and rooibos cocktail

This is the Ellerman House Fynbos Cocktail and its totally delicious and uniquie. Shaken with ice and poured into a martini glass with a twist of lemon its a perfect aperitif to kick off an evening out.

Ellerman House

Last week I had the wonderful opportunity to shoot few cocktails for this exclusive luxury hotel following on from the menu shoot I did there in winter. Its so easy to take pretty pictures at this private venue. You literally point your camera in any direction and it picks up something beautiful. The views, the jaw droopingly beautiful art scatttered all over the place (inside and out) and the lovely building with all its interesting nooks and crannies. Continue Reading →

a californication

A californication - Its a cocktail

The Californication is a cocktail. It looks really innocent, like you could drink it at breakfast, but really it is not. Its loaded.

Its kind of like a Long Island Iced T but with orange juice instead of coke and its rather tasty.

You literally throw a splash of vodka, gin, white rum and tequila into a glass, add lemon juice, a good dose of freshly squeezed orange juice and lots of ice and that’s it. Slices of fresh orange finish it off.

I’m clinging onto the last bit of summer over here but really looking forward to heading to NYC next month.

Cheers!

  • 15ml each vodka, gin, white rum and tequila
  • 15ml freshly squeezed lemon juice
  • about 70ml orange juice
  • stir in a large glass and top up with use

pineapple and ginger mint julep

pineapple and ginger mint julip

I added a twist to a classic Mint Julip, a cocktail I have recently fallen in love with.

I took a pineapple that was on the verge of over ripe and about to be tossed, and cut it up into small chunks. I added it to 2 cups of water and a cup of sugar and boiled it for about 30 minutes. I then allowed this syrup to cool and strained it into a jar. Infusions are such a stunning way to add flavour in a subtle way.

Ginger adds a little kick, but all in all its still intrinsically a mint julep. Continue Reading →

cucumber and gin martini

cucumber and gin martini

This very refreshing cucumber and Hendrick’s gin martini was a by-product of a large batch of tzatziki I was making over Easter to go with my roast leg of lamb. It seemed like such a waste to pour the juice down the drain. Cucumber is a classic garnish for a gin and tonic and in particular a Hendrick’s gin and tonic. You just need to read the comments section on my post about how to make the perfect gin and tonic to see how many people prefer it to citrus. I thought additional mint would compliment the cucumber well in this martini. Continue Reading →
