The richness of the chocolate milk stout works perfectly with these baked chocolate doughnuts, adding depth without overpowering. They are a delicious alternative to fried doughnuts and are very easy to whip up.

Ok so I know that baking a doughnut is kind of cheating and I resisted for a while, but then I spotted one of the pans and thought why the hell not? I mean the calorie saving plus the mess-chaos avoidance after deep-frying are enough of a reason to get me on board. baked yoghurt with spicy oranges

I was introduced to baked yoghurt at a recent lunch at the Taj Hotel in Cape Town and fell instantly head over heals in love. So simple and so creamy, I couldn’t believe this wonderous and super-simple recipe was not more widely adopted. Chef Harpreet Longani of the Bombay Brasserie restaurant – a fine dining Indian restaurant, gave us an inspiring cooking class before the lunch and her baked yoghurt dessert was our grand finale to end off the most delicious of meals.

I’ve wanted to learn how to cook Indian food for the longest time, it re-occured on my new years resolution list for so many years I finally gave up on it. It’s a cuisine I adore but feel intimidated by so this cooking class had me in raptures. Making our own breads, using a tandoor and then eating the most delicious curries. I was blown away by the incredible layers of flavour complexity out of this kitchen and I cannot wait to go back for more.

This is an unbaked cheesecake that is very easy to make and set to impress. The espresso is very subtle and amplifies the flavour of the chocolate. It’s also quite decadent, but then isn’t that the way desserts should roll?

I used two of my favourite Breville appliances to make this which is where the easy part comes in. You can literally whip the cream cheese and sugar in the 800 Class stand mixer while you grind up the biscuits in about 30 seconds using the Breville Control Grip Stick Blender with chopper attachment. They also make some of the best domestic coffee machines around, so you could effortlessly make an espresso to add to the mix. Continue Reading →

mango split with passionfruit, berries and coconut

Mangoes are in full season and I’m loving everything about them. Maybe I’m eating more than I normally do at this time of year, but I’m finding them extra delicious somehow. I made a mango, passionfruit and yoghurt brûlée recently which is a wonderful dessert or sweet treat at a brunch. Here I’ve made them into a split with vanilla ice cream, fresh berries, passionfruit, a drizzle of melted white chocolate and coconut shavings. Tropical fruity flavours with a scoop of decadence.
