I’m so lucky to have a client that produces such delicious and conveneint products as Pesto Princess, and every three months I get to play around with these condiments to come up with recipes for their seasonal mailer. Sometimes I just shoot and style the images, but mostly I get to create them too. I have been working on this brand for over a year and never run out of ideas. Their recently launched harissa paste and chimichurri are my new best foodie friends and I use them to spice up my food all the time. I love the convenience of these jars of flavour that can be dolloped onto or stirred into so many things.

When it comes to roasting an expensive leg of lamb I tend to be quite stuck in my ways. The recipe I love and always turn to is Jamie Oliver’s four-hour shoulder of lamb from his book ‘Jamie At Home’, and it’s perfect in its simplicity. Other than the delicious flavour of rosemary and garlic, which is excellent with lamb, it’s the method that I am particularly fond of. Whether you roast a shoulder or a leg, the outcome is the most succulent fall-off the bone meat imaginable. It also requires so little effort it literally cooks itself. Continue Reading →

This quick, easy and extremely tasty recipe for salmon has now become a regular feature in my house. I love that on a busy week night I can knock up a healthy restaurant-quality meal in minutes.

It’s also low in carbs if you are that way inclined.

It comes close to, or even takes over from my other favourite way of grilling salmon – with a miso and honey glaze.

Now I have been banging on about cauliflower ‘couscous’ since I made it back in June 2012 – and I will not be lying if I said I can easily eat a whole head of Cauliflower in one sitting. I have played around adding a variety of different flavourings to it, and in this recipe, which goes particularly well with the harissa salmon, I have added preserved lemon, cilantro and chilli. I was flicking through a BBC food mag in the Woolies queue the other day as one does. I try to skim the entire magazine before reaching the tellers.  I do this to get quick inspiration and because I cant really justify the R100 odd cover price.

I stumbled across a recipe for sweet potato wedges with harissa so this became the inspiration behind my recipe.

I simply love the orange variety of sweet potato which we have only been able to get fairly recently in South Africa.  I used to eat them all the time when I traveled and lived in the USA.  There they are called yams.  I love to bake them whole in the oven and then eat them with butter and freshly grated cheddar with a salad on the side.
