bagel with wasabi cream cheese, smoked salmon, avo and pickled ginger

bagel with wasabi cream cheese, smoked salmon, avo and pickled ginger

I shamelessly stole this bagel idea from one of my favourite and luckily extremely local deli’s Kleinskys. They have it on the menu at the OZC Farmers Market on a Saturday and its called the Californian. It’s a delicious combination of wasabi cream cheese, smoked salmon (or trout), avocado and pickled ginger. Drizzled over the top they do a honey and soy reduction which gives it a salty sweet finish.  Continue Reading →

roast chicken with stout, rosemary and honey

roast chicken with stout, rosemary and honey

I’ve taken my all time favourite roast chicken recipe which I’ve made using whole birds and chicken pieces and adapted it using stout instead of wine or verjuice. I really dont know how to make a more succulent roast chicken. I played around with the seasonings to better compliment the beer, and it turned out to be utterly delicious. The onions and carrots – which roast slowly with the chicken, and the honey add a much needed sweet element to offset the bitterness of the stout. The beer adds a rich savoury flavour to the sauce – which is plentiful, and reduces to a delicious jus to serve with the meat. Its so delicious you will grab a spoon and sip it like a broth.  Continue Reading →

granola bars with honey & maple

As soon as I started downloading the files it dawned on me that I shot the whole thing in portrait mode. An epic fail. I also should know better and I do know this. Perhaps it’s because I’m so hard-wired in terms of how I shoot my stills – which is 99% in portrait, I just set up all my equipment and got busy.

The whole thing happened quite spontaneously and I had no plans to make a video. I needed to retest this granola recipe that appears in my book, so I thought, why not just shoot myself doing it in the process? Continue Reading →

french toast sandwich with cream cheese, peaches & honey

french toast sandwich with cream cheese, peaches & honey

French toast + whipped lemony cream cheese with a dash of honey + fresh peaches or nectarines + a generous drizzle of honey = deliciously decadent breakfast treat that can be served as an open or closed sandwich.

I’ve used in season ripe nectarines because they are so perfect and juicy right now. Fresh peaches, or even tinned would be lovely too (yes, I admit, I love tinned peaches). Continue Reading →
