roast chicken with stout, rosemary and honey

I’ve taken my all time favourite roast chicken recipe which I’ve made using whole birds and chicken pieces and adapted it using stout instead of wine or verjuice. I really dont know how to make a more succulent roast chicken. I played around with the seasonings to better compliment the beer, and it turned out to be utterly delicious. The onions and carrots – which roast slowly with the chicken, and the honey add a much needed sweet element to offset the bitterness of the stout. The beer adds a rich savoury flavour to the sauce – which is plentiful, and reduces to a delicious jus to serve with the meat. You know that feeling after spending a few hours working on something and then realise it is all wrong? Well that is how I felt yesterday after making my first little recipe video on my own. As soon as I started downloading the files it dawned on me that I shot the whole thing in portrait mode. An epic fail. I also should know better and I do know this. Perhaps it’s because I’m so hard-wired in terms of how I shoot my stills – which is 99% in portrait, I just set up all my equipment and got busy.

French toast + whipped lemony cream cheese with a dash of honey + fresh peaches or nectarines + a generous drizzle of honey = deliciously decadent breakfast treat that can be served as an open or closed sandwich.
