I seem to have been on a roast chicken mission recently born mainly out of a desire to clear out my freezer stocks. I have 3 freezers – one chest, which seems to reach maximum capacity very quickly. I hate wasting food so freeze any scrap of leftovers I can. This on top if being a food stylist where any excess shoot food that is freezable gets tossed in. I had these chicken pieces and amazing Sicilians sausages from Giovanni’s so decided to combine in a saucy tray bake with fingerling fir potatoes (delicious) and loads of seasonings. I bought a large spiraliser while in the US and now find myself twisting all manner of vegetables into long thin ‘noodles’ and ribbons. Not only do they cook super quickly – thus I assume keeping more nutrients in and making them healthier, they have a wonderful texture and trick your brain into thinking you are eating an actual noodle. Brilliant. Low carb and nutritious meals all the time. My very favourite is zucchini in the ‘noodle’ format, which I love to simply stir fry with olive oil or Parmesan infused olive oil, salt and pepper and eat with lashings of freshly grated Parmesan cheese. Summer looks set to be well on its way here in Cape Town, but we must not forget all the storms and cold snaps that pass through as late as November. I know this because when I moved back to Cape Town nearly seven years ago, I arrived on the fifth of November to a rainy and cool Mother City. I rented a flat in Bantry Bay for the month, and during that time a violent storm ripped a tree out the garden. I remember needing an extra duvet on my bed for a lot of the time and even turned the heater on.
