I adore Vietnamese rice paper rolls and since visiting Vietnam a the end of last year I love them even more. They are pockets of vibrant freshness that are so healthy your halo starts shining the minute you pop one in your mouth. For this recipe I have kept them vegetarian – although I do love prawns in them too. The important thing is to add variety to give enough crunch and flavour. You can literally clear out your fridge to make them. I think I went a little OTT with this one, but I figured the world doesn’t need another banana bread recipe (yawn), so I mixed it up. I spent last week-end away in the beautiful hamlet of Churchaven up the West Coast. It was just what I needed after an abrupt start to my work year, giving me three days to recharge my batteries again and revel in this idyllic environment. I wanted to try these four delicious salad recipes out on my friends, because summer and salads at the beach seemed the perfect way to go.

I wanted to shoot in the gorgeous cottage we stayed in and, luckily for me, one which I will be visiting often this year.

I discovered that recipe testing, entertaining friends and shooting all at the same time is quite tricky and I ran out of steam when the food got to the table. The whole thing was quite a production and I just wanted everyone to get stuck in as opposed to watch me dither around taking more pictures. The food internet is going completely stark raving mad over pumpkin right now. Well in America anyway. This happens at this time every year. If there was any more pronounced way to signal Fall, Halloween and thanksgiving, bright orange pumpkin recipes in ever permutation is it. Despite us heading towards summer in South Africa, I felt like making a version of my very popular easy pumpkin scones with Parmesan and thyme from last year. I wanted to use butternut which is more of a staple than pumpkin here, and mix up the cheese a bit. I also adore cheese and chives together, so these were the bomb.

Oh, and baking makes me happy.

When I had a plethora of pineapples left over from a TV shoot recently, I knew that one of the recipes I wanted to do was an upside down cake. Its kind of a classic. I didn’t want to do a large one though, but rather adapt my very popular recipe for clementine upside down cakes. It’s the perfect kind of cake to handle a soft fruity topping, and it has been featured a few times on the Huffington Post, so I figured people out there have enjoyed it a lot.
