meatball and spinach ravioli bake

meatball and spinach ravioli bake

This recipe excited me because I’ve wanted to make it for a while. It also involves pasta, so nothing is better than that. Initially I conceptualized it being with tortellini, but good fresh filled tortellini is difficult to come by in South Africa, so ravioli – a much more common variant it is. I’ve combined fabulous things to make this dish. Spinach and ricotta ravioli, a homemade Italian tomato sauce, meatballs and buffalo mozzarella. These are all cooked separately and then brought together in a large skillet like a marriage made in heaven and baked. I also added some Parmesan because obvs. Continue Reading →

squid ink ravioli with broccoli and ricotta

squid ink ravioli with broccoli and ricotta

I have been dying to make squid ink pasta and to try out my new pasta machine, and this recipe presented the perfect opportunity to do both. I wanted to make a filling based around the ultra lip-smackingly delicious broccoli and anchovy pasta dish I published a while ago, and to capture the essence of that. I added ricotta to give the filling some structure and I have to say I’m thrilled with the results.

Woolworths who are one of the main sponsors of the new MasterChef Celebrity series, asked me create a recipe using broccoli. Its their magic ingredient on their stunning website this week. They have created some amazing ideas using broccoli as inspiration. You simply have to see this amazing little food film turning broccoli into radical food porn. Nothing excites me more than taking a humble vegetable and turning it into something spectacular. Each week they will be posting delicious ideas to inspire you to cook like a master chef. A dollop of Greek style yoghurt gives it creaminess and makes it even more breakfast like. I mean, we need to indulge every now and again. Continue Reading →

roasted pumpkin and ricotta gratin

roasted pumpkin and ricotta gratin

My adoration with ricotta deepens every day and I love using it in both sweet and savoury recipes. The fresh neutral taste lends itself to so many different flavour applications and its a joy to play with. I love to eat at breakfast with honey drizzled over and sliced fresh fruit. Top a cake like bread with all of this and you are in heaven. Its wonderful to bake into things too, like this roasted pumpkin gratin. It puffs up into an almost soufflé like texture and is quite scrumptious.

roasted pumpkin and ricotta gratin

I roast the pumpkin before to ensure its cooked through and the process adds wonderful flavour. The resultant texture in the gratin is quite soft, but it’s that sort of comfort I’m looking for. I added a breadcrumb and Parmesan topping to create some texture. A scattering of toasted pine nuts would be wonderful too. Continue Reading →
