fennel, radish & mint salad with lemon & ricotta

A couple of years ago I became obsessed with this fennel, radish and lemon salad and seriously I make it all the time in summer. It’s so fresh and crunchy, and I love to eat it with fish or chicken and pile it onto my sandwiches for lunch. I was late getting to the stage of really liking fennel. It was always to aniseedy for me, but when I got over that, I embraced this crunchy and liquorice flavour packed vegetable with gusto. When shaved into very thin slices with radish, the flavour somehow mellows with the lemon and olive oil. This recipe excited me because I’ve wanted to make it for a while. It also involves pasta, so nothing is better than that. Initially I conceptualized it being with tortellini, but good fresh filled tortellini is difficult to come by in South Africa, so ravioli – a much more common variant it is. I’ve combined fabulous things to make this dish. Spinach and ricotta ravioli, a homemade Italian tomato sauce, meatballs and buffalo mozzarella. I have been dying to make squid ink pasta and to try out my new pasta machine, and this recipe presented the perfect opportunity to do both. I wanted to make a filling based around the ultra lip-smackingly delicious broccoli and anchovy pasta dish I published a while ago, and to capture the essence of that. I added ricotta to give the filling some structure and I have to say I’m thrilled with the results.
