Ok so I know that baking a doughnut is kind of cheating and I resisted for a while, but then I spotted one of the pans and thought why the hell not? I mean the calorie saving plus the mess-chaos avoidance after deep-frying are enough of a reason to get me on board. I’ve taken my all time favourite roast chicken recipe which I’ve made using whole birds and chicken pieces and adapted it using stout instead of wine or verjuice. I really dont know how to make a more succulent roast chicken. I played around with the seasonings to better compliment the beer, and it turned out to be utterly delicious. The onions and carrots – which roast slowly with the chicken, and the honey add a much needed sweet element to offset the bitterness of the stout. The beer adds a rich savoury flavour to the sauce – which is plentiful, and reduces to a delicious jus to serve with the meat. Winter has finally hit Cape Town with full force and I couldn’t be happier about spending more time at home cuddling under a blanket and cooking comfort food like this. I’ve added Castle Milk Stout to this dish which adds a delicious slightly bitter depth of flavour that mellows after the 3 hours it takes to simmer away. I have adapted my maternal grandmothers never-fail, easy boiled fruit cake recipe and added Castle Chocolate Milk Stout which gives it a lovely depth of flavour. The slight bitterness offsets this sweet cake beautifully.
