trout en papillote with fennel and tomato

trout en papillote with fennel and tomato

This recipe for trout en papillote (trout cooked in a paper pouch) with fennel and tomato is another cracking dish from Ucook. It’s the perfect dish to adapt to one portion too, and it couldn’t be easier to knock up an unbelievably healthy and delicious restaurant-quality meal in minutes. The warm new potato salad served on the side with simply crème fraiche and parsley is sublime. It’s more of a rustic new potato mash and it’s a keeper. Continue Reading →

To continue on a slight party theme, and to do a recipe that is perfect for summer and entertaining at this time of year, I give you these simple and delicious crostini. They work perfectly for a light lunch or to serve as a snack with drinks. Rustic and packed with flavour, just the way I like it.

Simply take a baguette – I prefer to let it be a little stale, and cut slices as thick as you like. I think around 1.5cm works well. Brush them lightly with olive oil, place on a large baking sheet and roast in a 180 C / 350 F oven for 10 minutes. Just until they start going golden around the edges. I used a basil infused olive oil which I love, but any good quality will do. Allow them to cool. Continue Reading →

I used farfalle to make this delicious and super easy pasta recipe with spinach and fior di latte mozzarella. The sauce takes the same amount of time to make as it takes to boil the pasta, so its kind of ideal to do for a quick midweek vegetarian supper. The cheese melts into the other ingredients creating those delectable long strands as you eat, and it feels like a warm caprese salad with silky pasta and spinach.

The other reason I made this pasta was because it so colourful and I’m here today to celebrate colour and wine in all its glory. You might wonder what colour has to do with wine? Well that is the fun part. Continue Reading →

For some strange reason, I’m often not overly keen on events that involve me cooking. I spend so much of my time doing that, I don’t always feel like it when I’m going out. In the end though, I generally always have the most fun at these.

And fun is what I had a few weeks ago at the Fairlady magazine readers event. It was a pasta making workshop held at Jenny Morris’s Cook’s Playground in de Waterkant. The event co-incided with the pasta recipe booklet that was included in the May edition of the magazine. Justine Kiggen – the food editor- did a demo on how to make pasta, and then set us off to make 4 different pasta dishes with sauce. Continue Reading →
