vegan queso dip with chipotles

vegan queso dip with chipotles

The world seems to be obsessed with vegan and gluten free recipes right now so I’m diving in. I’m not doing it because I’m either vegan or gluten intolerant, but because I love playing around with new ingredient combinations and cooking techniques. I have never tried my hand at vegan cheese substitutes made with nuts, but have tasted a few that were quite tasty. I adore queso dip and chipotles so this recipe inspired me to dive into my kitchen and soak a few cashews. Continue Reading →

green juice with cucumber, celery, mint & ginger

green juice with cucumber, celery, mint & ginger

I love the refreshing taste of cucumber and in this juice with celery apple, mint and ginger, the combination is delicious and incredibly thirst quenching.

First up I must say that I think juicing on a regular basis is a bad idea. All the important fiber gets wasted and you need a lot of fruit and vegetables to make a decent amount of juice. The calorie load of a juice is far higher than that of the fruit or vegetable in its natural state and at the end of the day you are extracting a high percentage of water. I know this because after making this green juice I allowed it to settle in the bottle and really about 85 percent is pure water and the rest the green chlorophyll rich parts. If you were under any illusion that drinking green juices in some way ‘detoxes’ your body, please check out this brilliant article which totally debunks the myth. BUT, juice can taste delicious and for a special treat it makes a nice addition to the breakfast or lunch table. It can also be awesome when making a special cocktail, and I find it most useful when I have a hangover too (but lets not go into too much detail there). Continue Reading →

one – ingredient whole grain cracker

Dan Barbers one - ingredient whole grain cracker

So I bought the Food 52 Genius Recipes cookbook last week, and seriously, its incredible. I had heard of, and seen a good few of the recipes before because if you spend as much time on the food internet as I do it would be impossible not to. I had also made at least one recipe  – the  famous purple plum torte, so I know they are particularly extraordinary. I plan on making a lot more from the book and in fact have made three since last week already. It’s the kind of book that inspires you want to dive straight into the kitchen and get busy, and its the way I gauge how good a cookbook is.

The first recipe I made was these one-ingredient whole grain crackers because I had freekeh in my house for the first time and I love a good crunchy (healthy) cracker.  Continue Reading →

super healthy green smoothie

super healthy green smoothie

The base recipe for this super healthy green smoothie comes from a wonderful organic farm in Israel called Farma Cultura, located on the outskirts of Tel Aviv in the village of Bnei Zion. This little farm is exactly the kind of place you want to have right in your own neighbourhood. They grow an array of incredible organic produce and have a little shop on the property where they sell it along with various prepared dishes which are all freshly made by themselves. We popped in for a short visit while I was on my spectacular food tour to Israel in January and took a tour of the garden. Owner Gil Shacham-Amit and her husband made their green smoothie for us and it was delicious. Continue Reading →

3 ingredient, no churn, vegan chocolate ice cream {video}

3 ingredient - no churn - chocolate ice cream {vegan}

This is one of those fantastic recipes that almost feels like a miracle. Three ingredients are combined with a minimal amount of intervention to create an outstanding ice cream with a dreamy texture. No ice cream maker is required either, so anyone with a food processor can make it. On top of that it’s also vegan, so if you are avoiding dairy, this one is for you. Continue Reading →
