
A foodie friend of mine was messing around in the kitchen the other day and made this really nice potato salad for lunch. A little bit different and very tasty.
Roast the new potatoes with olive oil and Maldon salt until golden and soft (you could also steam if you wanted a slightly healthier option). Slice the top off a head of garlic and roast this at the same time. Allow to cool.


Chop up a few rashers of streaky bacon finely and fry until crispy.
Make some mayonnaise or use a good quality bought one – enough to coat the salad.
Slice the potatoes and squeeze the roasted garlic cloves out the head and chop. Mix this in a bowl with the bacon and a few sprigs of chopped or ground rosemary (chives or parsley would also be nice). Stir through the mayonnaise to coat. sprinkle a pinch of smoked paprika (if you so desire).
This was very tasty with the seared salmon with orange and ginger salad.
