Bruschetta (or crostini) with variety of toppings is the perfect pre dinner snack to have with drinks.  You can pretty much put anything tasty on these crunchy, garlicky toasts.

As a crunch junky I simply love them!

I was playing around with the stracciatella cheese I acquired from Puglia Cheese and wanted to add some intense flavour to the creamy mozzarella.

I used the red pesto and the olive and aubergine pesto I had from Pesto Princess.  I had some roasted beetroot dip. I put on a few slithers of smoked tuna , and then made my all time favourite bruschetta topping, a simple salsa with tomato, red onion and fresh basil.

The tomato, red onion and basil combination reminds me of a holiday I spent with a group of friends in a villa in Tuscany just outside Sienna.  We would make this as a snack with evening drinks using tomatoes that actually taste like tomatoes.

The fresh basil came from my first basil plants in my new herb garden.  Grown from seed, the leaves are still small but pungent and packed with taste.

You can make bruschetta in a variety of ways.  Rub a garlic clove over bread (slightly stale is good), and drizzle olive oil over and then toast on both sides lightly.  I like to brush already flavoured olive oil (Verlaque basil infused olive oil is stunning), or my own oil that has been languishing in its confit of smoked garlic, or even my homemade chilli oil (if you want a kick).

The creamy straccitella cheese added a depth of richness and mouth feel and carried the flavourful toppings beautifully.

  7. Oh heavens, if each and every one of those doesn’t look delicious! After a long week of flying, my fiancée will have both feet firmly on the ground tomorrow — the perfect opportunity for several of these with some fresh fruit and a bottle of wine. We’ll probably spend the evening with our neighbor’s cat as well. He has adopted our backyard as his daytime play/sleep space, and we don’t mind a bit!
