These bananas coated in crispy oat and honey cereal flakes make an easy and delectable week-end breakfast or brunch treat.
Kellogg’s approached me to come up with a few recipe ideas using their new limited-edition Special K Oats & Honey cereal. As a big fan of Special K, I was thrilled.
I love Banana’s which become rich and indulgent when you cook and bake them, and as the fruit takes on a caramel character. The cereal adds amazing crunchy texture which balances it all out. .
- 4 ripe bananas (ensure that these are not in anyway over-ripe)
- 1/4 cup of honey
- zest of half an orange
- 1T of orange juice
- about 3/4 of a cup of Special K oats and honey cereal
- yoghurt to serve (I used fat free to keep things healthier)
In a small pot heat the honey, orange juice and zest until it just starts to bubble and then take it off the heat. Lay the bananas in a dish that can fit them snuggly. Pour the honey orange syrup over the bananas and allow it to cool. As the honey cools it gets thicker again.
Pre-heat the oven to 180C / 350 F and empty the cereal into a plastic bag and crush lightly. Place in a flat shallow dish. Turn the bananas over in the honey in order to get as much of it on the fruit as possible. Immediately roll in the cereal flakes and place on greased oven proof tray. Bake for 15 minutes until the bananas are soft when pierced with a knife.
Stir the left-over orange and honey syrup into the yoghurt and serve this with the warm bananas.
The edges of the warm banana’s turn into a delicious gooey caramel. Garnish with fresh berries.
