On the 3rd of January, I was overjoyed to have been invited to a very special lunch at The Test Kitchen. Luke Dale Roberts had invited two British chefs who mentored him in his earlier years to come to Cape Town and cook with him. The event was Luke’s way of honouring them and bringing together two of the most influential people in his culinary past, Kevin Hopgood and Graham Garret, who he respectively credits with teaching him the fundamental rules of cooking, and also how to break them.

“It is a great honour for me to be cooking with two of my main influences, and I’m excited about this nostalgic, culinary journey. Mentorship is the biggest cog in the kitchen machine, and I want to highlight that, and celebrate it!”

About the Chefs:

Graham Garrett

Graham is chef and proprietor of The West House in Biddenden, Kent, a multiple award-winning restaurant that focusses on seasonal ingredients. Dubbed “Ruthlessly seasonal”, by food writer Charles Campion, The West House continues to excel for, as Graham says, “When you work with the seasons, it practically writes the menu for you”.

“Being in a position to get together to cook with two of your best mates is a real privilege that I know will result in some amazing food, great laughs and a few new memories”’

Graham Garrett

Kevin Hopgood

Kevin is chef and proprietor of Hopgoods and Co. in Nelson, New Zealand, winning multiple awards in its 14-year tenure. Kevin’s passion lies in knowing the provenance of all his ingredients, a luxury he was rarely afforded in the large London markets he started out in and ensuring only the finest quality produce is served at his tables.

LDR ORIGINS – THE MENTORS, A TRIP AROUND THE BRITISH ISLES

Inspired by “a journey around the British Isles”, each chef lend their own signature touches to dishes such as quail sausage rolls, Luke’s cottage pie, cauliflower cheese croquettes, steak and chips, piccalilli tongue, beans on toast, and Welsh rarebit to name a few, interpreted in each chef’s personal fine-dining style. Dale Roberts teamed-up with iconic winemakers in their own right, Eben Sadie, Adi Badenhorst and Ken Forrester to create a one-of-a-kind wine pairing experience to accompany the dishes.

Our British Isles lunch journey started out in the Dark Room of the Test Kitchen where we were spoiled with 6 inspired and utterly delicious snacks. We saw our butter being hand-churned before being taken into the main part of the Test Kitchen and the Light Room. Seated in the intimate dining space that has a full view of the kitchen we were able to see a lot of the kitchen action. Sadly, Kevin was not well on the day of our lunch

PS: Montgomery’s Cheddar is one of the few truly traditional, handmade, types of Cheddar produced by James Montgomery in Somerset, England. The farm uses milk only from Montgomery’s own herd of 200 Friesian cows
