A delicious avo toast recipe packed with Middle Eastern flavours
2 slices sourdough bread
2 Tbsp butter
Butter for frying eggs
½ avocado, peeled and sliced
4 Tbsp hummus
2 Tbsp feta, crumbled
Small handful of rocket (arugula)
1 tomato, sliced
Za’atar and alfalfa sprouts for garnish
Butter the sourdough on both sides and pan-fry until crisp and golden. Poach or fry the eggs according to taste.
On a dinner plate assemble as follows: toast spread with hummus, rocket, avocado, tomato, feta and top with fried / poached eggs. Sprinkle generously with , and top with alfalfa sprouts.
