This is one of my favourite recipes from my eBook Comfort. I love cooking cabbage. It is so humble and inexpensive but can transform into the most delicious things. I have linked to my eBook in my profile. Happy Friday.⠀

Okonomiyaki is a savoury Japanese pancake and is a hugely comforting dish. Popular in Osaka and Hiroshima, it consists of a simple batter with cabbage as a main ingredient and can be infinitely adapted. Literally translated it means ‘as you like it’, so it’s one of those meals where you can scrape out your fridge and put whatever you have on hand into the okonomiyaki. Pork belly and prawn meat are popular additions, but I love it with just prawns to keep it on the seafood spectrum. I also love it straight up and vegetarian. The toppings really make this delicious, and okonomiyaki are generously drizzled with Japanese mayo (Kewpie), a glossy BBQ sauce and katsuobushi (bonito flakes). I sprinkled on a flurry of dried seaweed or Aonori (kelp) and some Furikake seasoning too.⠀

Chicken Normandy (or chicken a la Normande) is a h Chicken Normandy (or chicken a la Normande) is a hearty French casserole that is perfect for this autumnal weather. Chicken braises slowly with bacon and cider until meltingly delicious. Finished off with pan-fried caramelised apple wedges and cream, it’s every bit as delicious as it sounds.
