Dubai Chocolate Rice Krispie Squares with Pistachio & White Chocolate

These Dubai-inspired chocolate Rice Krispie squares with pistachio, white chocolate & kataifi pastry fare a delicious and crunchy, chocolate treat.

Ingredients

  • 450 grams of white chocolate 3 x 150-gram slabs
  • 6 Tbsp pistachio nut butter approx 90 – 100 grams
  • 3 cups Rice Krispies
  • 1 cup toasted kataifi pastry
  • 100 grams of dark chocolate
  • 100 grams milk chocolate
  • 15 grams pistachios roughly chopped
  • A sprinkle of sea salt flakes

Instructions

  • Break the white chocolate into smaller pieces and place them in a bowl set over a pot of boiling water. Alternatively, melt the chocolate in the microwave.
  • Add the pistachio nut butter to the melted chocolate and mix until well combined.
  • Add the rice crispies and toasted kataifi pastry to the melted chocolate and mix to combine.
  • Tip the mixture into a lined 20cm x 20cm square baking tin and press down to evenly distribute. Allow to cool and set (you can speed this up by placing the tin in the fridge or freezer).
  • Melt the dark and milk chocolate together (either in a double boiler or in the microwave). Pour the chocolate over the cooled and set rice crispy mixture and spread to evenly coat the top.
  • Sprinkle over the chopped pistachios and salt.

Notes

Storage Instructions
  • At room temperature: Store in an airtight container for up to 2 weeks.
  • In the fridge: It is not necessary to store these Rice Krispie treats in the fridge as they could lose their crunch.
