My grandmother's stout fruit cake recipe
Prep Time:20 minutes
Cook Time:1 hour 30 minutes

Ingredients

  • 1 340ml bottle Castle Chocolate Milk Stout or milk stout + 2 tsp cocoa
  • 1 1/2 cups raisins or sultanas or a mix of both
  • ½ cup dried cranberries
  • 1 cup whole glace cherries
  • 1/4 cup citrus peel glace
  • 1 cup sugar 220 grams
  • 125 grams salted butter
  • 1 tsp baking soda
  • 2 cups flour 300 grams
  • 2 tsp baking powder
  • 1 large free-range egg

Instructions

  • In a medium, pot, add the fruit, stout, butter, sugar, and baking soda and bring to a boil. Simmer over low heat for 15 minutes. Stir regularly, keeping a watchful eye to prevent the liquid from bubbling over. Set aside to cool *this can be made the day before and left overnight.
  • Preheat the oven to 150C and line a 23cm cake tin with baking paper on all sides.
  • Sift the flour and baking powder into a bowl.
  • Add the egg and the cooled fruit mix and stir by hand until well incorporated.
  • Tip the batter into the prepared tin and bake for 1 ½ hours (90 minutes).
  • I love to serve this cake 'naked' with fresh fruit as a garnish. It really doesn't need anything else.

Notes

Storage instructions for stout fruit cake:

You can store this fruit cake tightly wrapped at room temperature. First, wrap it in baking paper, then foil, and store it in an airtight container.
It keeps well for several weeks.
If you want to mature it, drizzle a little brandy over the cake every 10 days or so. Re-wrap it well each time. This will deepen the flavour and keep it moist.
The cake freezes well. Wrap in baking paper and foil, then place in a freezer bag. Freeze for up to three months. Thaw overnight in the fridge, then bring to room temperature before serving.
Typical fruit cake storage guidelines:
• Keep wrapped to prevent drying out
• Store in a cool, dark place
• Feed with brandy or rum if desired
• Avoid repeated temperature changes
• Slice only what you need to keep the cake fresher longer
Omit the stout and use water if you prefer and want to keep it alcohol-free.
