Blueberry smoothie popsicles

I decided to turn my favourite smoothie recipe (now updated to a healthier high-protein one) into popsicles
because these are just so refreshing for summer. These blueberry smoothie popsicles are a guilt-free treat you and your kids will love.
On Monday I posted about my new favourite smoothie recipe made with blueberries, banana, yoghurt, almond butter and chia seeds (which by the way is as healthy AF) and it occurred to me they would make amazing popsicles. This is a great way to get your kids to eat something incredibly healthy whilst conning them into thinking they are eating ice cream. For me, it’s a great way to divide the smoothie into smaller ‘snackable’ portions to enjoy on these blazing hot Cape Town days. I actually really can not wait until summer is over. It’s killing me.
Make the smoothie as per this recipe, and then decant into a Popsicle maker and put in the freezer. If you have ones where the sticks are attached to the lids then go right ahead and put them on. If not, freeze the popsicles until semi hard and then place your sticks in the middle and then continue to freeze until set.
Blueberries are in peak season right now and I really cannot get enough of them right now. They are low in carb and super healthy so check out a few of my other recipes with blueberries:
Blueberry muffins with oats & almond
Blueberry ice cream with maple & cinnamon
Fluffy blueberry and banana pancakes
Deep apple & blueberry streusel cake
