Cooking Conversion Charts and Calculators

These are the cooking conversion charts and calculators I use every week, and they’re all on this one page. Start with the oven temperature converter below. Enter any temperature in Celsius, fan Celsius, Fahrenheit or gas mark and the rest update as you type.

Underneath you’ll find a weight converter for grams to ounces, a searchable cups to grams chart that gives you the weight of a cup of flour, sugar or anything else you’re likely to bake with, a liquid converter that switches between US and metric measures, all the spoon and cup measures, and a tin size converter for when a recipe asks for a 9-inch tin. Every chart is set on a 250 ml cup, which is the one I use in all my recipes.

Oven Temperature Converter

Oven temperatures are the one conversion where you should not do the maths. The exact answer for 180°C is 356°F, but no recipe has ever said that, and no oven dial goes there. Recipes use a standard ladder of rounded values, which is what this converter follows. It also handles the fan oven question, which trips up more people than anything else, and gas marks for anyone cooking from an older British book.

Fan ovens run hotter. Drop the conventional temperature by 20°C, and start checking about 10 minutes before the end of the baking time.

Metric to Imperial Weight Converter

Weight is where converting matters most, because it's the one measurement that decides whether a cake works. This one does exact maths rather than rounding to convenient numbers, so 250 grams comes back as 8.8 ounces and not a tidied-up 9. The good news is that ounces and pounds are identical in Britain and America, so you don't need to know where your recipe came from. Convert grams to ounces, or work backwards from an American recipe into grams, and you'll get the same answer either way.

Ounces and pounds are the same in the UK and the US, so this works wherever your recipe comes from.

Millilitres to Fluid Ounces Converter

Liquid is the one with a trap in it. A US fluid ounce is 29.57 ml and an imperial one is 28.41 ml. A US cup is 240 ml while a metric cup, the kind used in South Africa, Britain and Australia, is 250 ml. That's roughly a 4% difference, which won't ruin a soup but will show up in a custard or a delicate batter. The toggle lets you pick which system your recipe is written in. All my recipes use a 250 ml cup, so leave it on metric if you're cooking from this site. The chart below the converter lists UK and US fluid ounces side by side, so you can read off either one without switching.

Weigh it if you can. A cup of flour can vary by 20 grams depending on whether you scoop it or spoon it in, which is enough to change a cake. These figures assume flour is spooned into the cup and levelled off, and that brown sugar is firmly packed.

If your recipe comes from an American book or site, its cup is 240 ml rather than 250 ml, so its weights will be about 4% lighter than these.
