My favourite vinaigrette dressing

Basic vinaigrette salad dressing

I love this very basic vinaigrette dressing. It’s so creamy and delicious and I use this all the time.

Crush 1 clove of garlic, with 1 tsp (big) Dijon mustard, then in a ratio of 2:1 – olive oil to red wine vinegar.  A pinch of Maldon salt and a twist of black pepper. 

My latest garlic-free version has 1 generous teaspoon of Dijon, a teaspoon of honey, and then a 2: ratio of olive oil to red wine or sherry vinegar. Season the dressing with salt and pepper.

As an alternative you can use whole grain mustard instead of Dijon if you prefer.

  1. Seriously, the best vinaigrette I have tasted in a looong time.
    Thought I might try it with cranberry or rasperry vinegar as well, for something different.
