with shortbread, some cherries, a few nuts and mini marshmallows

Thought I’d do a little update on my previous rocky road post that I did around Christmas.  This time, I made it with shortbread biscuits (eet sum more) vs. tea biscuits (aka marie) and it works out so much better.

I make this for gifts to take to dinner parties and use whatever I have available in my kitchen:

Melt the chocolate in a double boiler, I buy chocolate in bulk, 5kgs at a time. You can use any chocolate and I like 80% milk and then I throw in about 20% dark (70%) chocolate just to add some depth. Add the broken biscuits, nuts, cherries or small marshmallows etc.

Line a shallow dish with flattened out foil and tip the chocolate and bisuits in.  Spread around and even out. Put it in the fridge to cool if you are in a rush, cut into squares and pack into cellophane bags with a nice ribbon.
