rocky road with shortbread

Thought I’d do a little update on my previous rocky road post that I did around Christmas.  This time, I made it with shortbread biscuits (eet sum more) vs. tea biscuits (aka marie) and it works out so much better.

I make this for gifts to take to dinner parties and use whatever I have available in my kitchen:

Melt the chocolate in a double boiler, I buy chocolate in bulk, 5kgs at a time. You can use any chocolate and I like 80% milk and then I throw in about 20% dark (70%) chocolate just to add some depth. Add the broken biscuits, nuts, cherries or small marshmallows, etc.

Line a shallow dish with flattened-out foil and tip the chocolate and biscuits in.  Spread around and even out. Put it in the fridge to cool if you are in a rush, cut it into squares and pack it into cellophane bags with a nice ribbon.

Kitchen‎ sink‎ Rocky‎ Road chocolate bars ⁣ ⁣I‎ love‎ Rocky‎ Road‎ because‎ you‎ add‎ in‎ so‎ many delicious‎ textures‎ like‎ marshmallows,‎ shortbread,‎ other‎ chocolates‎ and‎ sweets.‎ It‎ makes‎ the‎ perfect‎ gift.‎ ⁣ ⁣I’ve‎ used‎ a‎ mix‎ of‎ 70%‎ chocolate‎ and‎ milk‎ chocolate‎ and‎ you‎ can‎ go‎ as‎ fancy‎ as‎ you‎ like.‎ ⁣ ⁣For‎ 500gms‎ of‎ chocolate‎ I‎ added‎ about‎ 480‎ grams‎ of mix‎ ins.‎ Chopped‎ shortbread‎ biscuits,‎ a‎ handful‎ of‎ Ferraro‎ Rocher‎ chocolates‎ (chopped),‎ shortbread‎ chuckles,‎ cut‎ up‎ marshmallows,‎ Rice‎ Krispies‎ ‎and‎ smarties (m&m’s) ⁣ ⁣You‎ can‎ add‎ nuts‎ like‎ almonds‎ or‎ peanuts,‎ glacé‎ cherries‎ or‎ cranberries‎ which‎ I‎ like‎ to‎ do‎ for‎ Christmas.‎ ⁣ ⁣Add‎ in‎ more‎ or‎ less‎ of‎ anything‎ just‎ make‎ sure‎ you‎ add‎ in‎ a‎ lot.‎ ⁣ ⁣Toss‎ these‎ all‎ in‎ a‎ bowl‎ and‎ pour‎ over‎ the‎ melted‎ chocolate.‎ Tip‎ this‎ into‎ a‎ lined‎ dish‎ (I‎ didn’t‎ do‎ this‎ but‎ it’s‎ easier‎ if‎ you‎ do),‎ sprinkle‎ over‎ a‎ little‎ flaky‎ salt‎ (optional)‎ and‎ set.‎ Cut‎ into‎ squares‎ and‎ store‎ in‎ a‎ sealed‎ container‎ or‎ wrap‎ up‎ as‎ gifts.‎ ⁣ ⁣This‎ chocolate‎ Rocky‎ Road‎ will‎ make‎ a‎ great‎ candy‎ treat‎ for‎ Halloween‎ 🎃‎ ⁣ ⁣ ⁣chocolate‎ sweets‎ recipe‎ #halloweencandy
