I generally like to tweak any recipe that crosses my path, but this berry Eton mess with pistachio is just perfect. Its part of the 2018 UCook Christmas Feast box and I got to eat it for the first time on set. I styled all the dishes for their stills and video campaign so obviously got to sample everything. If you live in South Africa, this is the way you want to do Christmas.
You can custom make your box by picking which of the protein mains you want, and then pick which sides to pair with that. And there are so many to choose from. The duck fat roast potatoes are a must, and the pork belly roasted with pine needles is drool-worthy. This is a delicious alternative to turkey.
This festive berry Eton Mess is a fuss-free dessert that is 100% suited for a Southern Hemisphere summery Christmas. The pistachios which let’s face it, are the best nuts on the planet take this dessert to the next level. You can buy good quality meringues from your local deli to make life easier, but I had these homemade ones leftover from a shoot I did recently. You will want to get or make meringues that are slightly drier and crumbly as this gives the dessert a wonderful texture.
I used a combination of strawberries and raspberries and I halved the recipe.
Ok – I did tweak the method a little and added all the sugar to the berries. I also mixed Everything together vs layering the fruit, meringues and cream because I like to take every possible level of fuss out of any recipe. Layering it could potentially make it prettier, so you decide.

I styled this recipe in my kitchen on my brand new and incredible marble table top from Womag. It has transformed my kitchen and thus my life. It’s from an Italian Bianco Carrera slab and they honed it into matte perfection for me. When I look at the beautiful grey vein it transports me back to Italy and allows me to live out a small piece of my fantasy. My kitchen is now another shooting location in my home and it makes life so much easier doing both in the same space. My light is very different in that area as it faces Northwest and better in the morning, so to say I am thrilled with it is the understatement of the year. As a result, I got quite carried away shooting this recipe so you get an extra dose of pics with this one.

Recipe – Summer berry Eton Mess with pistachios that is the Ucook Eat N’ Mess
Serves 4 generous portion or 6 slightly smaller ones.
- 250ml cream (1 cup)
- 1 lemon
- 50gms castor sugar
- 300gms mixed berries
- 45gms raw pistachios
- 140g ready-made meringues
Cut up 250gm of the berries and add them to a bowl with the lemon zest and a little less than the juice of the lemon (20ml). You are reserving the rest for garnish. Add the sugar and mash things up with a spoon, potato masher or the back of a wooden spoon. Allow this to macerate for a bit.
Roughly chop the pistachios and crush up the meringues.
Whip the cream until a medium-firm peak making sure you don’t take it too far.
Add the crushed berries, meringues and ¾ of the pistachios to the cream and gently fold them through. Dollop this mixture into individual serving glasses and garnish with the remaining berries and pistachios. Serve immediately or set aside into the fridge until you are ready.
