How to make miso caramel in an Instant Pot

This easy miso caramel sauce is utterly delicious and I made it in my Instant Pot. The miso adds a very subtle umami flavour note and I find it more delicious than salted caramel. You can still add sea salt flakes to this sauce as the miso does not make it particularly salty.

I have taken my perfect salted caramel recipe and added miso paste to it. It’s very easy to make on the stovetop and doesn’t require a sugar thermometer. You can see how I made it the conventional way in this recipe for a salted caramel affogato.

I wanted to test this recipe out in my new Instant Pot Pro which has amazing features. The one advantage is that the temperature remains constant while on the saute function. It’s a slightly slower process but with the even temperature, there is less risk of it burning. The results were fantastic.

It takes about 34 minutes to make and you need to keep a close eye.

Step-by-step instructions on how to make miso caramel sauce:

Add the sugar to the bowl of your Instant Pot set to saute. Set the timer for 35 minutes which will cover the time needed to make this miso caramel sauce.

Stir the sauce gently from time to time as it starts dissolving. This will prevent it from burning. Allow it to slowly melt the sugar going from a light to a darker caramel colour.

Add dd the butter only once the sugar has completely dissolved and it’s a deep golden colour.

When the sugar has all dissolved, add the butter in parts whilst continuously whisking. The butter will splatter quite a bit, just keep whisking and ensure that you do not touch the sauce.

If it looks like it is splitting, don’t worry, just keep on whisking.

When the sauce has become smooth and amalgamated (this happens quickly), add the cream and keep on whisking. Once it has amalgamated once again, add the miso paste and stir until it is thoroughly mixed in. I used white miso paste which I bought from my local Asian supermarket. 

Remove the bowl from the Instant Pot and allow the caramel sauce to completely cool.

How to make miso caramel in an Instant Pot

A delicious miso caramel sauce made in an Instant Pot

Ingredients

  • 400 gm sugar
  • 165 gm butter cut into cubes (it can be cold)
  • 250 ml 1 cup cream
  • 2 Tbsp miso paste

Instructions

  • Heat the sugar in the bowl of your Instant Pot set to saute. Set the timer for 35 minutes which will cover the time needed to make this miso caramel sauce.
  • Stir the sauce gently from time to time as it starts dissolving. This will prevent it from burning. Allow it to gently melt the sugar going from a light to a darker caramel colour.
  • It is important to add the butter only once the sugar has dissolved and it’s a deep golden colour.
  • When the sugar has all dissolved, add the butter in parts whilst continuously whisking warning it is VERY hot – the butter will splatter quite a bit, just keep whisking and ensure that you do not touch this sauce.
  • If it looks like it is splitting, don’t worry, just keep on whisking
  • When the sauce has become smooth and amalgamated (this happens quickly), add the cream and keep on whisking. Once it has amalgamated once again, add the miso paste and stir until it is thoroughly whisked in. 
  • Remove the bowl from the Instant Pot and allow the caramel sauce to completely cool 

Notes

Add a shot of espresso at the end to make this an espresso caramel instead of the miso paste.
