my 4 favourite pancake recipes

The Internet has informed me that tomorrow is Shrove Tuesday so I thought I would share my 4 favourite pancake recipes. Any Day that celebrates pancakes is my kind of day. I haven’t got more because I feel like these 4 will have you covered for any kind of pancake occasion. Pancakes are easy to make and you generally have all the ingredients at home to do so.
The first one is also my most recent and my latest obsession, a brown butter Dutch Baby pancake with blueberries and lemon. This oven-baked pancake is similar to a giant Yorkshire pudding and you could go savoury or sweet with it (just take out the sugar if you want to add savoury things). I’ve stirred lemon curd through yoghurt to top this beauty and added the blueberries on top with lashings of maple syrup.
Ricotta pancakes with Blueberry and orange would be another favourite and I love how the ricotta adds a lovely richness and texture. I’m also a massive fan of blueberries in pancakes, so they are almost always essential for me. I have added a dash or orange zest to give the pancakes a citrus edge.
I made these fluffy blueberry pancakes in a quest to create very tall and light ones and played around using a little oat flour. They are a hit.
As far as a crepe or French style pancake goes I discovered the perfect recipe a few years ago when I made these pancakes with caramel and bananas. The combination of fillings was an attempt to recreate a pancake of my youth and brought back all the memories. This crepe recipe has a marvellous texture with lacy edges and its the one I would always go for. You can make this in advance too and keep it stored in the fridge for a few days. Think, pancakes all weekend kind of vibes.
