A adore a seriously pimped up avo toast on the weekend when breakfast merges with lunch and you have more time to potter around the kitchen. This rendition with hummus, poached (fried) egg, avo, feta, tomatoes, rocket and za’atar comes from the beautiful new Angama Mara cookbook – Out Of An African Kitchen. It’s also a popular breakfast you will find on the menu at the lodge where the food is uncomplicated but always delicious.
I was lucky to have been commissioned to shoot the food for the book across six locations at the lodge in Kenya and at my home studio. It’s on sale in all good bookshops and can be recognised by its bright red and blue colours. You literally can’t miss it. Hummus toast with poached egg, avo, feta, tomatoes, rocket & za’atar
A delicious avo toast recipe packed with Middle Eastern flavours
- Yield: serves 1 1x
2 slices sourdough bread
2 Tbsp butter
Butter for frying eggs
½ avocado, peeled and sliced
4 Tbsp hummus
2 Tbsp feta, crumbled
Small handful of rocket (arugula)
1 tomato, sliced
Za’atar and alfalfa sprouts for garnish
Butter the sourdough on both sides and pan-fry until crisp and golden. Poach or fry the eggs according to taste.
On a dinner plate assemble as follows: toast spread with hummus, rocket, avocado, tomato, feta and top with fried / poached eggs. Sprinkle generously with , and top with alfalfa sprouts.
