Easy air fryer chicken fajitas

These are my super easy and flavour-packed air fryer chicken fajitas recipe. They are healthy, delicious, and perfect for a busy weeknight supper. Bake the fajitas in the air fryer after rolling to make them extra crispy.
This is a very classic chicken fajita mix of chicken, peppers, and red onion. I tossed the chicken strips in store-bought fajita (or taco) seasoning mix for extra convenience. You can of course make your own.
Baking the rolled fajitas for 5 minutes at the end crisps up the tortillas and melts the cheese. I have made these so many times since I developed the recipe in June. It’s become one of my go-to suppers in my healthy eating regime.
If I’m not rolling them in flour tortillas, I like to eat the chicken fajita mix with rice or quinoa in a bowl with salad (pico de gallo) shredded lettuce, slices of cucumber, yoghurt and pickled jalapeño.

Ingredients for air fryer chicken fajitas:
- Chicken strips: Buy ready-cut chicken strips of cut 2 skinless, boneless chicken breasts into strips
- Peppers: Use 1 red or yellow bell pepper.
- Red onion: Red onion (or Spanish onions) is sweeter and works best with this recipe.
- Fajita seasoning: use store-bought fajita or taco seasoning in this recipe. Alternatively, make your own
- Flour tortilla: this recipe works best with flour tortillas, and I used ones that are medium in size.
- Toppings: I have used yoghurt, grated Cheddar cheese, fresh coriander (cilantro), sliced pickled jalapeno and pico de gallo (salsa). Serve with guacamole. Add as many of the toppings as you like and use sour cream if you prefer.
How to make air fryer chicken fajitas
- Make the pico de gallo before. Season generously with salt, squeeze over the fresh lime juice and allow this to marinate in the fridge while you are making the fajitas.
- Toss the chicken strips in the taco/fajita seasoning until well coated. This can be done in advance
- Add the sliced peppers and red onion to a bowl, drizzle over olive oil and season with salt and pepper and toss well to coat. Make sure you don’t cut the pepper and red onion too thin otherwise, it will burn in the air fryer. Cut the onion to a similar thickness as the pepper.
- Make your fajitas by adding the fillings as follows:
- Spread a generous spoonful of Yoghurt or sour cream over the base of the tortilla
- Then add a few strips of the chicken
- Add the cooked pepper and red onion
- Top that with pico de Gallo
- A sprinkle of grated cheese
- sliced pickled jalapenos (as hot as you would like it)
- A couple of small sprigs of coriander.
- Roll the fajitas up and secure them with a small skewer.
- To crisp up the fajitas, spray them lightly with olive oil and cook in the air fryer at 180C/350F for 5 minutes.
Can you make chicken fajitas ahead?
You can make the chicken and vegetables ahead of time and then assemble and bake for the second bake just before serving.
These easy air fryer chicken fajitas are best made fresh and eaten fresh.
What to serve with easy air fryer chicken fajitas
These air fryer chicken fajitas in flour tortillas are a complete meal.
Serve these fajitas with guacamole, extra yoghurt or sour cream.
You could also serve these s part of a Mexican feast with other delicious Mexican dishes such as quesadillas or chipotle chicken enchiladas.

Ingredients
Fajita filling:
2 chicken breasts cut into strips (or use already cut chicken strips)
2 ½ Tbsp fajita or taco seasoning mix
1 red or yellow pepper sliced
1 red onion sliced into the thick slices
4 flour tortillas
Olive oil to coat and spray
Toppings:
Cheddar or mozzarella cheese, grated
Yoghurt of sour cream
Fresh coriander/cilantro
Sliced pickled jalapeno
Pico de gallo salsa (red onion, tomatoes, and lime juice)
Guacamole to serve optional
Instructions
To make pico de gallo simply cut up ripe tomatoes or baby tomatoes into small pieces (about a cup) and finely chop half a small red onion. Season generously with salt and squeeze over fresh lime juice. Allows this to marinate in the fridge while you are making the fajitas.
Toss the chicken strips in the taco/fajita seasoning until well coated.
Add the sliced peppers and red onion to a bowl, drizzle over olive oil and season with salt and pepper and toss well to coat.
Preheat the Air Fryer Duo on each side. One half for the vegetables to 200C for 15 minutes and the other half for the chicken to 180C for 12 minutes.
To test if your chicken is done, simply break or cut the thickest strip and half and look. Alternatively, insert a thermometer in the centre of the chicken piece, and the internal temperature of the chicken should be read 75°C/165F.
Once the Air fryer has preheated, toss the chicken into the respective baskets, close, press start and sync to finish.
Make your fajitas by adding the fillings as follows: First, spread a generous spoonful of Yoghurt or sour cream over the base of the tortilla, then add a few strips of chicken, followed by some of the cooked pepper and red onion. Top that with pico de gallo, a sprinkle of cheese and sliced pickled jalapenos (as hot as you would like it) and a couple of small sprigs of coriander.
Roll the fajitas up and secure them with a small skewer.
To crisp up the fajitas, spray them lightly with olive oil and cook in the air fryer at 180C/350F for 5 minutes.
Serve with guacamole (optional) or any additional toppings.
